Farinata
A Farinata is a regional dish from the Ligurian region of Italy. It's a typical street food that you'd get piping hot and eat wrapped in paper. It's made from chickpea flour so it's gluten-free and I find the perfect savory base for just about any combination of toppings. A hero of the fancy-lazy recipes because it's a quick, minimal ingredient recipe great for any meal.
INGREDIENTS
all units: U.S. Imperial
*makes one large pancake or two smaller pancakes
- 1 c chickpea flour
- 1 tsp salt
- 1 tsp freshly ground pepper
- 4 tbsp olive oil
- 1 c lukewarm water
Suggested Toppings
- Roasted Carrots, babaganoush & sliced avocado
- Smoked salmon, creme fraiche & herbs
- Fresh dill, parsley, cilantro, pickled onions or fresno chilis
Preheat the oven to 350º.
In a large mixing bowl, whisk together the chickpea flour, salt, pepper and 2 tbsp olive oil. Slowly our the water in. The mixture should look like heavy cream.
Heat the remaining 2 tbsp of olive oil in a large cast-iron skillet. Pour the entire mixture into the pan and wait for it to bubble on the edges. Place the pan in the oven and bake for 10-15 minutes until the pancake is firm and golden brown.
Remove the pan and finish with desired toppings.
